Ingredients:
vegetable cooking spray |
3/4 pound smoked turkey sausage, thinly sliced |
2 cups chopped onion |
1 1/2 cups chopped green pepper |
1 cup chopped celery |
4 cloves garlic, minced |
2 (16-ounce) cans no-salt-added kidney beans, drained |
2 (14 1/2-ounce) cans no-salt-added stewed tomatoes, undrained |
1 teaspoon dried oregano |
1 teaspoon pepper |
2 teaspoons hot sauce |
3 cups cooked long-grain rice (cooked without salt or fat) |
1/3 cup chopped fresh parsley |
Directions:
1. Coat a Dutch oven with cooking spray; place over medium heat until hot. Add sausage; cook 3 minutes or until browned, stirring often. Add onion, green pepper, celery, and garlic; saute 10 minutes or until vegetables are tender. Stir in beans and next 4 ingredients; bring to a boil. Reduce heat, and simmer, uncovered, 15 minutes, stirring occasionally. 2. Combine rice and parsley in a bowl. To serve, spoon 1/2 cup rice mixture into each bowl. Spoon sausage mixture evenly over rice. |
