I was fortunate to work at a wonderful hotel where they fixed this dish everyday. I changed things to make it easier to prepare. If you like the old fashioned way you may make your own sauce with large chopped onions and bell peppers to make it more authentic but I prefer easy over anything. Ingredients:
2 eggs |
salt & pepper |
1-tbs heavy cream |
1-tbs green onion |
2 sausage patties or links cooked and chopped |
1 slice of your favorite cheese |
1/4 cup of your favorite spaghetti sauce (chunky is best) |
Directions:
1. Heat skillet to medium heat. 2. Spray with non-stick spray or melt 1-TBS butter 3. While pan is heating beat eggs, salt, pepper and cream in a bowl 4. Pour into heated pan 5. When eggs begin to cook slightly add onion, sausage and cheese 6. in the middle of the omellete 7. fold ends of omlette into the center or however you do your omlette 8. flip and cook to desired doneness 9. Meanwhile in the microwave heat spaghetti sauce 10. Plate omelette and crown with warmed sauce 11. ****To add a little punch you may want to add a pinch of cayenne 12. or a couple of shakes of hot sauce into spaghetti sauce before 13. pouring over omelette |
