On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share Ingredients:
2 lbs fresh haddock fillets |
1 1/2 cups fresh tomatoes, chopped |
1/2 cup green pepper, chopped |
1/3 cup lemon juice |
1 tablespoon cooking oil |
2 teaspoons salt |
2 teaspoons dry onion flakes |
1 teaspoon basil leaves, crushed |
1/4 teaspoon pepper, coarse |
1/8 teaspoon hot sauce |
Directions:
1. Preheat oven to 500*. 2. Place fillets in baking dish. 3. Combine tomatoes, green peppers, lemon juice, oil, salt , onion flakes, basil leaves, pepper, and hot sauce. 4. Spoon tomato mixture over fillets. 5. Bake fillets for 5 -8 min or until fillets flake easily. 6. Place fillets on a warm platter. 7. Garnish with tomato and green pepper rings. |
