This quick and easy gumbo is great for those cold winter days! Ingredients:
3 pounds boneless skinless chicken breast, big cubes |
3 pounds smoked sausage, sliced |
2 cans chicken broth |
2 cans stewed tomatoes |
3 bell peppers, chopped large |
3 onions, chopped large |
tablespoon roux |
large bag frozen okra,chopped kind |
season to taste |
Directions:
1. Cube chicken and sausage and fry in large stock pot(or down in louisiana a black pot or magnalite). 2. Fry until almost cooked thru, then remove from pot. 3. Pour chicken broth, tomatoes with juice and tablespoon of roux into pot and bring to a boil.( you can add water here if you feel you need more juice) 4. Add onions and bell peppers. 5. Once boiling return meat to pot and cook over medium heat for about 30 minutes. 6. Season to taste as your cooking. 7. Once cooked, turn to low and add frozen okra and cover for 15 minutes. 8.
