This is perfect over steamed rice. The file' powder is the key to making this sooo good. You'll find it in the spice section. This dish has been a favorite in our family for over 20 year. Ingredients:
3 tbl butter |
3 tbl flour |
1 chopped onion |
2-3 cloves garlic - minced |
1 16 oz. can whole tomatoes w/ juices - chunked |
1 green pepper - chopped |
2 bay leaves |
1 tsp. dried oregano - crushed |
1 tsp. dried thyme - crushed |
1/2 tsp to lots of tobasco (to taste) |
1.5 cups water |
1/2 tsp salt |
2 lbs. shrimp - peeled and deveined |
1 - 7.5 can crab meat - drained, cartlidge removed (fresh is better if you have it) |
1 tsp. file' powder |
Directions:
1. In large saucepan melt butter, blend in flour. Cook and stir until golden brown (make a roux). 2. Stir in onion and garlic. Saute until onion is translucent. 3. Stir in undrained tomatoes, green pepper, bay leaves, oregano, thyme, tobasco, 1 1/2 cups water and tsp salt. 4. Bring to a boil. Reduce heat and simmer covered for 20 minutes 5. Remove bay leaves 6. Stir in shrim and crab and heat through (about 7 minutes) 7. Remove some a ladel full of broth from the pot. Bled the file powder into the hot broth. When blended return broth to the pot. Stir until combined. 8. Serve over rice |
