Very different but very good. I made this for my neighbor who thinks life is made of eggs, cheese and sausage. He loved it. Hope you do too.
Ingredients:
10 eggs hard boiled
1/2 cup white onion diced
1/2 cup celery diced
1/2 cup green pepper diced
1 large can whole tomatoes
1 teaspoon worcestershire sauce
1 teaspoon salt
2 teaspoons freshly ground black pepper
3 tablespoons butter melted
4 tablespoons flour
2 cups milk
cracker crumbs
Directions:
1. Peel eggs then slice and set aside.
2. Saute onion, celery and green pepper in butter.
3. Add tomatoes cut in bite size pieces.
4. Stir occasionally.
5. Add Worcestershire sauce, salt and pepper then set aside.
6. Make white sauce by combining butter, flour and milk.
7. Layer eggs, tomato sauce and white sauce in buttered glass casserole dish.
8. Repeat until all ingredients are used.
9. Sprinkle top with cracker crumbs and dot with butter.
10. Bake at 350 until browned.
