Ingredients:
1 whole(s) eggplant large |
1 onion |
2 tablespoon(s) butter |
2 tablespoon(s) flour |
1-2 cup(s) chopped tomatoes or diced tomatoes |
1 cup(s) cheese |
1 cup(s) bread crumbs |
Directions:
1. Boil eggplant (add salt to water to taste) until tender. Saute' butter, flour, and onion to make a roux. Mix together eggplant, tomatoes, and roux. Place in casserole dish and bake at 350. |
