On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share
Ingredients:
2 1/2 cups all-purpose flour
4 1/2 tablespoons cornmeal
4 tablespoons granulated sugar
2 tablespoons baking powder
1 teaspoon salt
3 eggs, beaten
3/4 cup shortening, melted
1 1/2 cups milk
2 tablespoons green peppers, chopped
2 tablespoons onions, chopped
2 tablespoons diced pimentos
3/4 cup american cheese, grated
Directions:
1. Blend eggs, milk, and shortening together.
2. Combine flour, salt, baking powder, sugar, and cornmeal.
3. Add green pepper, onion, pimento, and cheese.
4. Pour milk mixture into the cornmeal mixture.
5. Stir just until mixed.
6. Pour batter into hot greased muffin cups1/2 full.
7. Bake at 400* for 25-30 minute.
