Creole Chicken With Long Grain Brown Rice |

Easy, tasty, low-fat dish. Ingredients:
1 tablespoon olive oil |
2 chicken breasts, sliced up |
24 ounces chopped tomatoes |
1 cup chicken broth |
1 green pepper |
2 onions |
3 garlic cloves |
1 teaspoon cumin |
1 teaspoon coriander |
1 tablespoon chili powder |
1 teaspoon oregano |
2 teaspoons creole seasoning |
10 saffron threads |
2 cups long grain brown rice |
3 1/2 cups chicken broth |
Directions:
1. Saute onions, garlic, and green pepper. 2. Add sliced up chicken. 3. Add tomatoes. 4. Add chicken broth and spices. 5. Simmer until liquid is reduced. 6. While simmering, prepare rice using a pressure cooker. 7. Recommend 2 c rice to 3.5 cups chicken broth. |
