Creole Chicken & Sausage Gumbo |

From my collection of handwritten recipes. This uses pre-cooked chicken. Ingredients:
2 medium onions, diced |
1 green pepper, diced |
1 red pepper, diced |
1 jalapeno, diced |
1 tablespoon garlic, crushed |
1/4 cup butter |
4 cups water |
1 tablespoon instant beef bouillon (or au jus mix) |
1 tablespoon chicken base (or bouillon cube) |
1 teaspoon salt |
1/4 teaspoon pepper |
1 bay leaf |
1 (10 ounce) package frozen okra |
1 (16 ounce) can tomato paste |
2 -3 lbs cooked chicken |
1 lb sausage (andouille is best) |
1 (10 ounce) package frozen corn |
hot pepper sauce (like tabasco) |
Directions:
1. In a large pot, cook and stir onion, peppers and garlic in butter over low heat until onions are tender (about 5 minutes). Add remaining ingredients. Heat to boiling, reduce heat. Simmer 45 minutes, stirring occasionally ( for more flavor or spice, add more pepper sauce or chili powder). Serve over bed of rice with lemon as garnish. |
