A savory Southern way to serve this lovely vegetable from an old cookbook. Make Creole Cauliflower au Gratin by sprinkling 1/2 cup of grated cheese on top and baking in the oven until melted and lightly browned. Ingredients:
4 tablespoons butter |
1 onion, minced |
1/2 chopped bell pepper |
3 tablespoons flour |
2 cups cooked tomatoes (canned is fine) |
3/4 teaspoon salt |
3 cups cooked cauliflower |
Directions:
1. Melt butter in a saucepan; add onion and bell pepper, lightly brown 2. Blend in flour; add tomatoes and salt 3. Heat to boiling point and cook for approximately 3 minutes, stirring constantly 4. Add cauliflower and heat through. Serve on buttered toast |
