Cremini Mushroom Potato Dish

Ingredients:
2 garlic cloves, minced
2 cups shredded monterey jack cheese, divided
1 cup ricotta cheese
1/4 cup finely chopped fresh parsley
1 teaspoon dried thyme
1 lb potato, sliced (peeled or unpeeled)
1 teaspoon salt, divided
1 teaspoon fresh ground black pepper, divided
1 lb cremini mushroom, sliced
2 cups sliced onions
Directions:
1. In a large bowl, combine the garlic, half the Monterey Jack cheese, the ricotta, parsley, and thyme; set aside.
2. Arrange potatoes in a single layer in bottom of greased 13 x 9 inch glass baking dish, overlapping as necessary.
3. Sprinkle with half each of the salt and pepper.
4. Spread the cheese mixture over the potato layer.
5. In the same large bowl, combine the mushrooms and onions.
6. Layer on top of cheese mixture.
7. Sprinkle with remaining salt and pepper.
8. Top with the remaining Monterey Jack.
9. Bake in a preheated 350° oven for 40-45 minutes or until potatoes are tender when pierced with a fork and top is lightly browned.
