Light version of Creme Brulee; our family of six held a taste test next to Joy of Cooking's recipe for Creme Brulee and the light version actually won!
Ingredients:
5 egg whites
1 cup fat-free evaporated milk
1 cup light vanilla soymilk
5 tablespoons brown sugar
4 teaspoons powdered french vanilla fat free non-dairy coffee creamer
4 teaspoons vanilla extract
2 tablespoons splenda sugar substitute
Directions:
1. Preheat oven to 325.
2. Place 6 creme brulee dishes in a 13x9 inch baking dish.
3. Combine the milk, brown sugar and powder creamer in a medium skilled over medium heat. Stir until the sugar dissolves completely.
4. In the meantime, whisk together the egg whites and vanilla extract.
5. Remove the milk mixture from heat and whisk in the egg white mixture.
6. Pour into 6 creme brulee dishes.
7. Pour hot water into the baking dish.
8. Bake for 28 minutes.
