A rich, but easy-to-make custard sauce, cooked on the stove top. Delightful as a dessert on its own, or served as a compliment to another dessert, you will love this. Ingredients:
12 egg yolks |
8 oz sugar |
1 quart milk |
1 tbsp vanilla |
Directions:
1. combine egg yolks & sugar in a stainless steel bowl 2. whip until thick & light 3. scald the milk in a boiling water bath, or over direct heat 4. very gradually pour the scalded milk into the egg yolk mixture, stirring constantly with the whisk 5. set this bowl over simmering water 6. heat it slowly, stirring constantly until it thickens enough to coat the bottom of a spoon (about 185*F) 7. immediately remove the bowl from the heat 8. set it in a pan of cool water 9. stir in vanilla 10. stir the sauce occasionally as it cools |
