Wonderful sweet and simple dessert from the Appaalachian Mountains. Great with ice cream, or whipped cream. Ingredients:
blackberry mixture: 3 pints blackberries |
1 cup sugar |
3/4 cup water |
1 1/2 tbsp. butter |
milk (as needed) |
batter: 2 cups all-purpose flour |
1 tsp. salt |
1 egg |
3 tbsp. sugar |
3-1/2 tsp. baking powder |
Directions:
1. In a bowl sift flour, sugar, baking powder, and salt. 2. Add egg, mix well. Add milk ,as needed, to make a stiff batter. Set aside. 3. In a lrg. pan combine, blackberries, sugar, butter, and water and bring to a boil. 4. Drop batter a spoonful at a time into boiling blackberry mixture. 5. Cover with lid and cook for about 15-20 min. 6. Serve with your choice of ice cream or whipped cream. |
