Smooth, creamy and savory and filling. Great with corn bread. Recipe found in Carolina Country...made a few changes. Ingredients:
1 pk skinless, boneless chicken thighs, wash and cut into cubes |
1 medium onion, chopped |
1 1/2 t garlic powder |
vegetable oil, for sauteing |
2 - 15 oz cans great northern beans, rinsed and drained |
2 t knorr chicken bullion or to taste |
2 c water, adjust if needed |
2 - 4 oz cans green chilies, chopped |
1/2 t salt or to taste |
1 t cumin |
1 t oregano |
1/2 t pepper |
1/4 t cayenne pepper |
1 c sour cream |
1/2 c heavy whipping cream |
Directions:
1. Heat oil in a large non-stick pot over medium heat. 2. Saute chicken, onion and garlic powder until chicken is no longer pink. 3. Add beans, bullion, water, chilies and seasonings. 4. Bring to a boil. 5. Reduce heat. 6. Simmer uncovered for 30 minuutes. 7. Remove from heat. 8. Stir in sour cream and heavy cream. 9. Serve immediately. |
