                    Try jacket potatoes with this creamy Waldorf potato topping or stuff it into pitas with lettuce for a portable waldorf salad. Ingredients: 
                    
                        
                                                4 baking potatoes  |  
                                                1 teaspoon olive oil  |  
                                                200 g pot soft low-fat cheese  |  
                                                2 stalks celery, thinly sliced  |  
                                                1 small red onion, halved and finely sliced  |  
                                                1 cox's apple, cored and chopped  |  
                                                50 g walnut pieces  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Prick the potatoes with a fork and sit them on a microwaveable plate. 2. Rub the skins with the olive oil, and sprinkle with some sea salt if you like. 3. Microwave on High for 8 mins until soft in the centre. 4. Leave to cool while you prepare the topping. 5. Mix the soft cheese, celery, onion, apple and half of the walnuts; season to taste. 6. Cut the potatoes open. 7. spoon on the topping 8. sprinkle with the remaining walnuts.                              |
