This is amazing for topping crostini or serving alongside crudites, but it's also delicious as a sandwich spread with slices of cucumber, red onion and sweet pepper! Makes about 2 1/2 cups, 2 tbsp/serving. Ingredients:
1 1/4 cups canellini beans, drained and rinsed |
1-2 tbsp bean liquid (or water) |
1 clove garlic |
1 green onion, minced |
4 oz fat free cream cheese |
1/2 cup non-fat plain yogurt |
1/2 tsp dried basil |
1/2 tsp dried oregano |
1 cup (8 oz) canned artichoke hearts (packed in water), drained well and diced |
1 tsp lemon juice |
Directions:
1. In a food processor, puree beans with enough of the bean liquid or water to make a thick paste. 2. Add garlic and green onion, puree completely. 3. Blend in cream cheese, yogurt and dried herbs. 4. Pulse in artichoke hearts and lemon juice until mixed, then transfer to a bowl or serving dish and chill before using. |
