Creamy Turkey Wild Rice Soup |

Quick-cooking wild rice is faster to prepare than regular wild rice and is equally delicious. Or, look for cans of cooked wild rice. Ingredients:
1 cup diced carrots |
1 cup onion, chopped |
2 (18 ounce) cans progresso™ recipe starters™ creamy portabella mushroom cooking sauce |
2 cups cubed cooked turkey |
1 1/2 cups cooked wild rice |
1/2 teaspoon dried thyme leaves |
garnish, if desired |
chopped fresh parsley |
Directions:
1. In 4-quart saucepan, heat 1 cup water, carrots, onion, 1/2 teaspoon salt and 1/4 teaspoon pepper to boiling. Reduce heat; cover and cook 4 to 6 minutes or until carrots are tender. 2. Stir in all remaining ingredients except parsley; heat to boiling. Reduce heat to low; simmer 10 minutes to blend flavors, stirring occasionally. Sprinkle with parsley. |
