Creamy Tomato Tortellini Soup |

This tastes very similar to a popular soup served at a local restaurant where we live. Ingredients:
4 minced garlic cloves |
2 tablespoons olive oil |
1 large onion, minced |
1/2 cup merlot |
1 (45 ounce) jar ragu garden chunky pasta sauce |
4 -5 cups half-and-half (can use some milk) |
1 (19 ounce) package frozen cheese tortellini |
1/2-1 cup fresh spinach (optional) |
Directions:
1. In large stockpot simmer garlic, olive oil, onion and merlot for 5 minutes. 2. Add pasta sauce and half n half, cook on medium heat. 3. Cook soup until warm, do not allow it to come to a boil or simmer. 4. While soup is heating cook tortellini according to pkg directions. 5. Add tortellini and spinach to heated soup and serve. |
