Fast and easy tomato soup that taste's just like Mom's! Ingredients:
3 t olive oil |
2 onions, chopped |
2 cloves garlic, chopped |
4 t all purpose flour |
56 oz petite diced tomatoes, with juice (2 cans) |
3 c low sodium chicken broth |
1 c whole milk, warmed |
1 salt and pepper to taste |
Directions:
1. Heat oil in large soup pot over medium high heat. Saute onion until softened, 3 to 5 minutes. Add garlic and cook until slightly softened and fragrant, about 1 minute. Stir in flour to blend, about a minute. 2. Add tomatoes with juice and broth to the pot. Increase heat to high and bring to a boil. Stir or whisk constantly until slightly thickened, about 3 minutes. 3. Carefully transfer soup, in batches, to a blender and puree until smooth. Pour into a bowl and repeat the process until all the soup is pureed. Return to pot and stir in milk. Cook over low for 3 to 5 minutes, until heated through. DO NOT BOIL! Season with salt and pepper. |
