A nice creamy homemade soup. Great with a grilled cheese. Ingredients:
2 tablespoons butter |
1 onion |
3 garlic cloves |
78 ounces crushed tomatoes |
5 1/4 cups chicken stock |
3 sprigs fresh oregano |
1/2 cup half-and-half cream |
salt & pepper |
Directions:
1. Melt butter. 2. Chop onion and garlic add to butter. 3. Saute for approximately 6 minutes. 4. Add tomatoes, stock and oregano bring to a boi. Reduce heat. 5. and simmer gently until thickened about 45 minutes. 6. Remove oregano springs. 7. Slowly add half & half stirring constantly. 8. Season with salt & pepper. 9. Garnish with oregano. 10. Serve. |
