A wonderfully easy creamy soup! It is so delicious and a favorite of all my friends and family! The crisp bacon adds such a great flavor to this soup. It is wonderful for those cold winters nights that will satisfy that cold to the bone chill that winter can bring! Read more ! OOOOhhh so good! Ingredients:
6 to 8 large tomatoes, cubed and cooked |
1 onion, chopped |
5 cloves garlic, minced |
1 cup chopped celery with leaves |
4 cups chicken broth |
1 stick butter |
1 to 2 tablespoons finely chopped fresh basil |
1 1/2 cups heavy cream |
cracked black pepper |
salt to taste |
1 teaspoon creole spice |
4 slices of crisp cooked bacon, crumbled |
shredded parmesan cheese |

Directions:
1. Saute onions, celery, and garlic in butter until tender. 2. Place cooked tomatoes in blender, add onion mixture and process in blender until smooth, 3. In medium saucepan, bring broth to a boil. 4. Add tomatoes, onion mixture and bacon, 5. Lower heat to med/low and cook for 10 minutes, stirring occasionally. 6. Season with creole spice, salt and pepper. 7. Stir in heavy cream and continue to cook on low heat for 2 to 3 minutes 8. Ladle over croutons and sprinkle with Parmesan cheese. |
