Creamy Tomato And Basil Soup |

This soup is great for rainy days, when winter comes, and for any other reason you want this nice warm soup that makes you warm all over. Just need to add a nice grill cheese sandwich tro the mix Ingredients:
12 tbsp butter or maragrine |
3 medium yellow or red onions, diced |
6 cups any type of white wine |
9 cups of any type of canned diced tomatoes |
6 cups heavy cream |
9 tbsp fresh basil, chopped |
salt to taste |
black pepper to taste |
Directions:
1. MELT butter in a heavy sauce pan. 2. Add yellow or red onions and sauté until tender, about 5 minutes. 3. Add white wine and reduce by 3/4. 4. Add tomatoes and heavy cream, bring to a simmer and reduce by 1/2. 5. PUREE soup in a food processor. 6. Stir in 2 Tbsp chopped basil, salt and pepper. 7. Garnish with diced Basil |
