Creamy Tofu Tarragon Dressing |

Use this dressing for salads or over steamed vegetables Ingredients:
10 ounces soft tofu, drained |
1/4 cup olive oil |
1/4 cup vinegar |
2 cloves garlic, pressed |
1/2 teaspoon coarse black pepper |
1 tablespoon dried tarragon leaves |
Directions:
1. Put all but the tarragon in your blender or food processor, blend for 1 minute until everything is smooth Add tarragon whip 30 seconds. 2. Refrigerate for at least 1 hour. |
