Ingredients:
2 tablespoons extra virgin olive oil |
4 cloves garlic, chopped fine |
1/4 cup finely chopped red onion |
1 (32 ounce) package soft tofu |
1/2 cup water |
3 1/2 tablespoons tamari or 3 1/2 tablespoons light soy sauce |
1 1/2 teaspoons dried sweet basil leaves |
2 cups hot cooked pasta |
1/4 cup chopped fresh parsley |
Directions:
1. Heat the olive oil in a small pan. 2. Add garlic and onion and saute over medium-low heat until the onion is translucent. 3. In food processor, blend the tofu until it reaches a uniform consistency. 4. Pour the blended tofu into saute pan with the garlic and onion, and cook for 5 minutes over medium heat. 5. Add water, tamari, and basil to the pan and cook for 5 minutes more. 6. Pour the tofu sauce over cooked pasta. 7. Toss well and sprinkle with parsley. 8. Serve immediately. |
