Creamy Tarragon and Avocado Dressing |

A simple home-made salad dressing from Real Simple magazine. You could leave out the water in this recipe so that you would have a dip or spread. It would go great with crudites or spread it on crostini with a slice of prosciutto. Ingredients:
1 cup baby spinach |
1/2 cup sour cream |
1/2 avocado |
1/4 cup fresh tarragon leaves |
2 tablespoons fresh lemon juice |
1 garlic clove, chopped |
kosher salt |
fresh ground black pepper |
water, to thin if necessary |
Directions:
1. Blend all the ingredients, except water, until smooth. 2. Thin with water, if needed. |
