Make sweet potatoes a staple at the dinner table. Ingredients:
4 medium sweet potatoes |
oil (i use coconut) |
2 ounces cream cheese |
1/2 cup butter, softened |
1/4 cup real maple syrup |
1 tbls vanilla extract |
1/2 teas salt |
1/4 teas pepper |
Directions:
1. Preheat oven to 400 2. Wash sweet potatoes and lightly coat with oil. 3. Pierce each potato several times. 4. Place on a foil covered baking sheet. 5. Bake for appx 1 hour or until fork tender. (This can be done anytime prior to meal. I do it in the morning then right before dinner I continue.) 6. In a sauce pan add cream cheese, butter, syrup, vanilla extract, salt & pepper warm until cream cheese is soft. 7. Cut potatoes in half, scoop plup into saucepan, discarding skins. 8. Beat with electric mixer until creamy. 9. Warm until evenly heated. |
