A great breakfast recipe, needs a little time, but well worth it. I cook up a large batch, and just refrigerate the leftovers. They re-heat well, just add a little milk to thin out. Ingredients:
1 cup steel-cut oats |
4 cups milk (or 2 c water, 2 c 1% milk if cutting calories) |
pinch salt |
cinnamon, to taste |
1 teaspoon vanilla extract |
1/3 cup dried raisins or cranberries |
3 tablespoons packed brown sugar |
chopped toasted walnuts, optional |
Directions:
1. In a medium bowl, combine all ingredients. Cover and let soak in the refrigerator overnight. 2. Transfer the oat mixture to a heavy-bottomed medium saucepan. 3. Bring to a boil over high heat. Lower the heat to maintain a gentle simmer and cook, uncovered, stirring frequently, until softened, about 10 minutes. 4. Serve with addional sugar and cream, if desired. |
