I got this recipe from a friend years ago and It's one of my favorites Ingredients:
2 lbs (6 cups) yellow squash |
1/4 cup chopped onion |
1 can cream of chicken soup |
1 cup sour cream |
1 cup shredded carrots |
1 8 oz pkg herb seasoned stuffing mix |
1/2 cup butter, melted |
Directions:
1. In saucepan, cook sliced squash and chopped onion in boiling salted water for 5 minutes then drain. 2. Combine soup and sour cream. 3. Stir in shredded carrots. 4. Fold in drained squash and onion. 5. Combine stuffing mix and butter. 6. Spread 1/2 stuffing mix in bottom of a 12 x 7 1/2 x 2 inch baking dish. 7. Spoon vegetable mixture on top. 8. Sprinkle remaining stuffing mix over vegetables. 9. Bake at 350 degrees for 25-30 minutes. 10. Serves 6. |
