This goes well with chicken or turkey..I found this in a charity church book dated 1986 from Toronto, ontario. Ingredients:
3 (10 ounce) packages frozen chopped spinach |
1/2 lb fresh mushrooms, chopped |
3 tablespoons butter |
2 tablespoons flour |
2 cups milk |
1 teaspoon salt |
1/2 teaspoon ground nutmeg |
3/4 cup feta cheese |
Directions:
1. Lightly grease a shallow 2-qt. casserole. 2. preheat oven to 325°F. 3. Cook spinach according to package directions.Drain and press out all the water and set aside. 4. Melt 1 tablespoon of the butter in a pan and cook mushrooms till lightly brown. 6-8 minutes stir often.set aside. 5. In a medium saucepan melt the remaining 2 tablespoon butter, stir in flour cook stiring for 1 min.,add milk salt and nutmeg stirring over medium heat approximately 5-6 minutes till thickened. 6. combine spinach, mushrooms and sauce in the prepared casserole.Top with feta cheese and bake uncovered for 25-30 minutes. |
