Creamy Spinach Potato Mash |

Nice way to change up plain old mashed potatoes Ingredients:
1 cup baby spinach, chopped |
6 baking potatoes, peeled and cubed |
2 garlic cloves, peeled |
2 sprigs rosemary, fresh |
3/4 cup chicken broth, heated |
2 tablespoons butter |
1/2 cup roasted red pepper, diced |
Directions:
1. Place spinach in colander. 2. In pot, bring next 3 ingredients and enough salted water to cover, to a boil. 3. Cook 20 minutes; pour over spinach to drain. Discard rosemary. 4. Return potatoes and spinach to pot and stir in butter and broth. 5. Using hand masher, mash mixture until smooth. 6. Stir in peppers and serve. |
