This is a hearty and delicious dip. It's creamy and awesome served w/ crostini, crackers, veggies or even used as a spread for sandwiches. :-) Ingredients:
1 can sauerkraut, well drained (about 1 1/2 cups) |
1 lb shredded cheddar cheese |
2 hard-boiled eggs, chopped |
1/2 green pepper, chopped finely |
1/2 red bell pepper, chopped finely |
1 sweet onion, chopped finely (eg: vidalia, walla walla, etc.) |
3 tablespoons sugar |
3 or 4 oz cream cheese |
2 teaspoons lemon juice |
2 cups mayonnaise |
salt and pepper |
Directions:
1. Mix all ingredients until moist. 2. Refrigerate overnight. 3. Serve with crackers, crostini, veggies, etc. |
