This is a useful way to use up that extra cup or so of left-over steamed or boiled rice, quick and easy to make. Ingredients:
1 1/2 boiled rice |
4 spring onions, thinly sliced (scallions) |
2 tomatoes, chopped |
8 pitted green olives, sliced in three rounds |
8 pitted black olives, sliced in three rounds |
1/2 cup savoury mayonnaise (not sweet, try thomy or hellmans) |
1/2 cup plain yogurt |
1 tablespoon cajun spices (or taco or burrito spice with a bit of chilli powder added) |
1 teaspoon vegetable bouillon granules |
1 teaspoon ground coriander |
salt and pepper |
Directions:
1. Mix everything together in a bowl and serve. |
