Great rice pud - Ingredients:
3 cups milk |
3/4 cup long-grain rice |
3 cups half and half |
3/4 cup sugar |
3 eggs |
1 tsp. vanilla |
1/2 cup or more raisins |
cinnamon and nutmeg to taste |
Directions:
1. In a 3-quart saucepan, bring milk to a simmer. Add rice gradually so that milk doesn't stop simmering. Stir, cover and simmer about 30 minutes, or until rice is tender and milk is absorbed. Remove from heat, stir in half and half and sugar. 2. In a small bowl, beat eggs well, then stir into rice mixture. Return to medium heat and, stirring constantly, cook until mixture thickens enough to coat a wooden spoon. Stir in vanilla and raisins, pour into a serving dish and sprinkle with cinnamon and nutmeg. |
