This delicious rice pudding tastes rich and creamy, but it's actually low in fat. Short grain Italian style rice and fat-free evaporated milk provide the yummy texture and taste. Cinnamon and a little vanilla add just the right amount of spice. Enjoy - Ingredients:
1 1/4 cups water |
3/4 cup short-grain rice (arborio or italian style) |
1/2 cup granulated sugar |
2 (370 ml) cans carnation fat-free evaporated milk |
2 cups water |
1/4 cup raisins |
1 teaspoon vanilla |
1 tablespoon cinnamon |
Directions:
1. Bring water to a boil in a large saucepan. Add rice, stir to combine. Cover. Bring back to a boil, reduce heat and simmer for 15 minutes or until water is absorbed. 2. Add sugar, evaporated milk, water and raisins. Stirring, bring to a boil. 3. Cover, reduce heat to low simmer and cook for 1 - 1/2 hours, or until mixture is very creamy. Stir occasionally. 4. Remove from heat and stir in vanilla. Transfer to a serving bowl and sprinkle with cinnamon. Delicious hot or cold. |
