This is similar to dessert rice pudding, but less sweet. The addition of fruit makes it a satisfying, hearty breakfast or dessert that even the kids will love. Makes six 3/4 to 1-cup servings. Ingredients:
3 cups skim milk |
1 1/2 cups water |
3/4 cup brown long-grain rice |
2 tbsp brown sugar |
1 large egg, beaten |
1 tsp vanilla extract |
1 tsp maple extract |
1 medium macintosh apple, chopped |
Directions:
1. In large saucepan, combine milk, water, rice and sugar. 2. Bring rice to a boil over medium-high heat; reduce heat to medium and simmer, stirring occasionally, until rice is tender, about 40 minutes. 3. Remove 1/2 cup rice mixture and mix with egg. 4. Return to saucepan and add vanilla, maple and apple. 5. Serve warm. |
