Creamy Quesadillas - With Guacamole |

My favorite restaurant is Chipotle - hands down but I moved far away from it and now the closest is over 2 hours away. So this guacamole is my tribute to Chipotle's - it's not exact, but very close. This quesadilla is a nice light option for lunch when you are dieting. [Remember avocados are high in fat/calories, but very beneficial to your health!] By my calculations, each serving is around 300 calories. Hope you like it as much as I do! Ingredients:
1 avocado, peeled and cut into chunks |
1/4 red onion, chopped |
1 lime juice |
1/2 jalapeno, minced with seeds |
1 tablespoon light sour cream |
salt, to taste |
garlic powder, to taste |
2 fat free tortillas, around 120 calories |
1 1/2 ounces laughing cow light garlic and herb cheese, 2 wedges |
Directions:
1. In a small bowl or deep plate, mash avocado and add onion, lime juice, and jalepeno. Keep those seeds in the jalepeno for some heat! :). 2. Give it a taste, and then add sour cream, salt, and garlic powder as you desire it. 3. Get tortilla, spread laughing cow cheese wedge on top of half of it. Spread guacamole, fold in half. 4. Cook on a greased George Foreman grill and cook until golden brown. Mmm! |
