CREAMY POTATO SPINACH CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Elmhurst Estate in Heath, Texas in 1981. Ingredients:
8 large potatoes peeled cooked and mashed |
8 ounces sour cream |
2 teaspoons salt |
1 teaspoon freshly ground black pepper |
2 tablespoons chopped chives |
1/4 cup butter |
10 ounces frozen chopped spinach thawed and well drained |
1 cup shredded cheddar cheese |
Directions:
1. In large bowl combine all ingredients except cheese. 2. Spoon into a greased two quart casserole then bake uncovered at 400 for 15 minutes. 3. Top with cheese and bake 5 minutes longer. |
