CREAMY POTATO SPINACH CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Elmhurst Estate in Heath, Texas in 1981.
Ingredients:
8 large potatoes peeled cooked and mashed
8 ounces sour cream
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons chopped chives
1/4 cup butter
10 ounces frozen chopped spinach thawed and well drained
1 cup shredded cheddar cheese
Directions:
1. In large bowl combine all ingredients except cheese.
2. Spoon into a greased two quart casserole then bake uncovered at 400 for 15 minutes.
3. Top with cheese and bake 5 minutes longer.
