I serve this with warm yeast rolls and a salad for a complete supper. So good! Ingredients:
2 pounds potatoes peeled and chopped into 1 cubes |
1 cup cooked diced carrots |
1 cup chopped sauteed onion |
2 cups chicken broth |
1 cup milk |
1 cup heavy cream |
2 tablespoons butter |
11/2 tablespoons sugar |
salt and pepper to taste |
Directions:
1. In large saucepan cook potatoes in water to cover until tender, about 20 minutes. Drain. 2. Meanwhile saute onions in butter. 3. Cook carrots in 2 cups of water for 15 minutes(DO NOT DRAIN) 4. Place 1/4 each of potatoes, carrots and all carrot liquid and onion in food processor and process until smooth. 5. Transfer to large saucepan, add remaining vegetables and seasoning 6. Heat through |
