A creamy potato salad with egg and cream. Ingredients:
2 medium potatoes, peeled, chopped in 1cm cubes |
1 egg, hard boiled |
2 tablespoons mayonnaise |
1 tablespoon thickened cream |
salt and pepper to taste |
fresh chives to garnish |
Directions:
1. Bring a little water to the boil in a saucepan. Add the potato and simmer for 5 minutes or till soft. Drain, transfer to a bowl and put in fridge to cool. 2. Meanwhile, bring 2 cups of water to a boil in a small saucepan and boil egg for 3 minutes, crack and peel shell and chop egg. 3. Blend mayonnaise and cream in a bowl. Add potato when cool, and egg, and stir to coat potato. Season with salt and pepper and garnish with chives. Bon Appetite |
