Quick and easy hearty cream soup that will make people think you cooked all day. Perfect for a cool evening. Our new family favorite! Ingredients:
6 potatos, peeled and cubed |
2 leeks, trimmed and chopped |
1 clove garlic, crushed |
1 tbs butter or margarine |
1/2 tsp salt |
2 cans chicken broth. (4 cups) |
1 tbs better than bullion chicken base |
2 c half and half |
1/2 c sour cream |
white pepper |
Directions:
1. In a large saucepan or stock pot, sweat leeks and garlic in butter or margarine and salt until soft. 2. Add chicken broth, base and potatos and bring to boil, cook until potatos are soft. 3. Remove from heat, stir in Half and Half and sour cream. 4. Blend soup with immersion blender until smooth and creamy. 5. Add pepper to taste. 6. Serve hot. |
