An easy to prepare dish that makes a great accompaniment. Ingredients:
6 medium sized portobello mushrooms sliced 1/2 cm thickness |
1/2 c light cream |
2 cloves of garlic diced |
1 red onion - diced |
olive oil |
1 c frozen spinach defrosted |
small handful chopped cashews |
salt & pepper to taste |
8 quatered cherry tomatoes |
Directions:
1. Heat enough olive oil in a pan to just cover the bottom of the pan. Sprinkle salt over the base of the pan and add the diced garlic cloves. 2. When they start to sizzle add the chopped portobellos (chopped to approx 1/2 cm thickness) and the onion. 3. Cook over a moderate/high heat until onions are becoming translucent & mushrooms softened. 4. Reduce the heat and add the spinach, cream & cashews. 5. Add pepper and more salt to taste. 6. Cook until the cream has reduced. 7. Add the cherry tomatoes for the last 3 minutes so they become tender yet retain their shape. |
