I found this recipe in an old Southern Living Cookbook. My FIL loves Pina Coladas and I wanted to surprise him. They were a hit. Ingredients:
8 1/2 ounces cream of coconut |
8 ounces crushed pineapple, undrained |
1/2 cup coconut |
1/4 cup light rum |
1/4 cup milk |
1 tablespoon powdered sugar |
ice |
Directions:
1. Combine all ingredients except for ice in a blender. 2. Pulse until well blended. 3. Add ice cubes until you reach the desired consistency. |
