Creamy Pesto Chicken Sandwich |

A yummy sandwich with fresh, healthy ingredients. Ingredients:
2 ounces fresh basil |
2 tablespoons almonds |
1 garlic clove |
2 tablespoons olive oil |
2 tablespoons parmesan cheese |
1 chicken breast, cooked |
1/4 cup onion |
1 cup greek yogurt |
1 tomato, sliced |
oregano |
salt |
pepper |
4 tablespoons mozzarella cheese, shredded |
4 sandwich buns, toasted |
Directions:
1. pesto: In a food processor, combine basil, almonds, garlic, olive oil, parmesan cheese, and salt/pepper. 2. Mix the pesto with greek yogurt. Dice or shred the chicken and combine with pesto/yogurt mixture, oregano & onion. Spoon onto sandwich rolls and top with tomato and mozzarella. Put under broiler just long enough to melt the cheese - 3minutes. Enjoy. |
