Cream of Peanut Soup I got this from the Jif web sight.I help people who are new to food Pantry foods find ediable ways to cook the food box foods.This one seems popular right now Ingredients:
2 tablespoons butter or margarine |
1 stalk celery, chopped |
1/2 medium onion, chopped |
1 1/2 tablespoons all purpose flour |
4 cups chicken broth |
1 cup creamy peanut butter |
1 cup milk |
snipped chives opt. |
chopped peanuts for garnish (optional) |
traditionally crushed dried peppers are added |
Directions:
1. MELT butter in medium saucepan. Cook celery and onion until 2. onion is tender, but not browned. Stir in flour and cook about one 3. minute. Whisk in chicken broth, cooking until thickened and bubbly. 4. REMOVE from heat. Puree mixture in batches, in a blender, until 5. smooth. Return to saucepan. 6. ADD the peanut butter and milk, stirring to blend thoroughly. Heat 7. through, but do not boil. Serve hot or cold. Garnish with snipped 8. chives and chopped peanuts, if desired. |
