A refreshing dessert for a warm, summer's day...or anytime you feel peachy! (Cook time includes baking time for pie crust). Ingredients:
1 (3 ounce) package peach jell-o |
3/4 cup boiling water |
1 cup peach ice cream, softened |
1 cup cold water |
1 (3 1/2 ounce) package instant vanilla pudding |
1/2 cup non-dairy whipped topping |
1 8-inch baked pie shell, cooled |
Directions:
1. Dissolve gelatin in boiling water. 2. Add ice cream and stir until melted. 3. Combine milk and pudding mix in small mixer bowl. 4. Beat at low speed for 2 minutes. 5. Add gelatin mixture; whip until fluffy. 6. Fold in non-dairy whipped topping. 7. Spoon into pie shell. 8. Chill about 2 hours. 9. Garnish with additional whipped topping and peach slices. |
