Elegant and easy! It's easy to keep all the ingredients on hand. Ingredients:
1 onion |
2 teaspoons oil |
1 1/2 cups rice |
1/2 cup apple juice |
1 1/2-2 cups stock |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 cups frozen peas |
1/2 cup parmesan cheese |
Directions:
1. Chop onions. Put in medium pot and saute over medium heat until translucent. 2. Add rice and stir for one minute. 3. Add apple juice, 1 1/2 cups stock, salt and pepper. Bring to a boil, then reduce heat to medium-low. Cover and cook 15 minutes. 4. Stir in peas and Parmesan, adding more stock if needed, until creamy. |
