Adapted from Everyday Health newsletter, serve like mashed potatoes Ingredients:
2 lbs parsnips, peeled and cut into 2-inch pieces |
1 large pear, peeled, cored, and halved |
4 garlic cloves, peeled |
1 tablespoon margarine |
2 teaspoons lemon juice |
1/8 teaspoon salt |
pepper, black ground, to taste |
Directions:
1. 1. Place parsnips, pear and garlic in a large saucepan and cover with lightly salted water. Bring to a boil. 2. 2. Reduce heat to medium-low, cover and simmer until the parsnips are tender and can be easily pierced with a knife, 20 to 25 minutes. 3. 3. Drain and transfer to a food processor. Add margarine, lemon juice, salt and pepper. Process until completely smooth. 4. 4. Scrape into a serving bowl and serve hot. (To keep puree hot for up to 1 hour, cover with parchment or wax paper and set the bowl in a pan of barely simmering water.). |
