Creamy Parmesan Brown Rice

A high protein creamy rice dish that is lovely served with sauteed vegetables
Ingredients:
2/3 cup brown rice
5 g butter
1 egg
1/4 cup grated parmesan cheese
1 lemon, juice of
pepper
1/4 cup fresh parsley, chopped
Directions:
1. Cook the rice for 30 minutes, until tender.
2. Beat the egg and stir in the parmesan, lemon juice and pepper.
3. Stir the rice into the egg and cheese mixture.
4. Simmer for 5 minutes.
5. Stir in chopped parsley and serve.
